My all-time favourite – the banana bread. This is the cake I always made
for my son (Shingi)’s high school cake sale whenever it was his class’s turn.
His teachers knew me for it they always looked forward to him bringing one.
I had this recipe book that I loved to use.
You could tell the banana-bread page was the most frequently visited –
it had become discoloured and tattered, unlike all other pages which were
rarely opened and so still clean and intact!
Banana Bread Story!
It so happened that on one occasion, I could not find my recipe book. I looked everywhere, turning the house upside-down, but nothing showed up. I was running out of time, the cake sale was the following day, I just had to find the recipe book! On noticing the desperation on my face, my son looked at me squarely in the eye and said “mum, you’ve made that cake so many times. By now you should know the recipe by heart,” and he walked away.

I quit searching instantly and reflected on what my son had just said
for a second; it all made perfect sense. I went on to gather all my utensils
and ingredients, got the oven ready, and boy did I whip up the best banana
bread creation I’d ever made. I have not needed to refer to a recipe book for
this recipe since then. I would love for you to try it!
